The multi flower honey produced by Azienda Apistica Luja can be of two types: the “light” one (white or light amber) and the “dark” one (amber, dark amber).
Multi flower “light” honey is mostly produced between the end of Winter and the beginning of Spring whereas the production of “dark” multi flower honey takes place mainly from the end of Spring until the Fall.
The “light” multiflower
“Light” multiflower is characterized by wild lavender, asphodel, echium, clover and rosemary. The colour varies between white and light amber, somewhat colourless or straw yellow with all the tonalities which can be found in the liquid honey whereas is white or light beige in the crystallized state.
The scent is often not particularly intense, typically floral, rather fine and delicate.
The flavour is sweet or very sweet but not very intense and persistent.
This type of honey is generally very fluid in the liquid state and rather dense with crystals when in crystallized state.
The “dark multiflower”
In “dark”multiflower honey cardoon prevails, specifically the species called Cistus. Colour is light amber or dark in liquid state whereas light beige or brown in crystallized state. In dark honey the process of crystallization is much slower.
The scent is intense and sometimes very intense as the fruity component prevails on the floral.
The flavour is sweet , very fruity, and the aftertaste is somewhat bitter and intense.
The aroma is intense and persistent.
The cardoon has great influence in the determination of the colour, the strong scent and the aftertaste sometimes bitter in this type of honey.
